Green Garden Sandwich

Ingredients

● 4 slices 647 Wheat Bread, divided

● 1/4 cup mayonnaise

● 1 tbsp minced fresh cilantro

● 1 tbsp fresh parsley

● 1 lemon, zested

● 1/2 seedless cucumber, sliced thin

● 1 ripe avocado, peeled, seeded, mashed

● 1 cup mung bean sprouts

● 4 leaves butter lettuce

Instructions

  1. Combine mayonnaise, cilantro, parsley, and lemon zest in small bowl.
  2. Spread mayonnaise mixture over 2 slices of bread.
  3. Top mayonnaise slices with cucumbers, mashed avocado, sprouts, and lettuce.
  4. Top with remaining slices of Wheat Bread. Cut in half and serve.
